Fit the biggest fan that the space will allow. If the thermostat in the engine and the stat on the fan are working properly the engine can't be overcooled. The stats just operate to suit.
I seem to remember reading that some parts of the world were supplied with "export radiators" on their 7's. These had a greater concentration of fins per inch. I don't know if this is true for Australia.
