I had exactly the same problem when I fitted the larger brake callipers. It requires more swept volume at the master cylinder to push the Pistons on to the discs. I wasn't comfortable with the pedal travel even with stainless braided brake hoses.
I fitted the Rimmers uprated master cylinder / servo combo and it cured it immediately. There's about as much travel as the pedal on a Citroen CX - that's not much at all. Lots more feel and confidence as well. It was literally fit and forget, no fettling required. It wasn't cheap until they had one of their sales. I think I got 20 to 25% off.
I think some of the Australian guys on the forum have fitted Volvo brake items to uprate them. I don't know if thats extended to the servo/cylinder combo.
