If you don't mind my asking, what is the horspower of the Cosworth engine that you are thinking about putting in?
The engine I have out of a Focus with webers and a header should put me in the 160 - 175 range. This will be backed up with a Ford T-5 speed transmission. I plan to still use the stock 5 speed rear axel with the four speed brake cylinders.
The one problem I have at the moment is the oil pan, may still have to buy the one from Retro Ford as that is the only one I see with a rear sump.

I was planning to rebuild the engine to totally standard spec so that would give it about 210 bhp, should be reliable at that, tickover nicely, was planning to change to cos 4x4 pistons as this removes the inherant piston slap in the earlier design ........apparently. Also planned to use a cossie T5 box or sierra type 9 and the 5 speed TR back end. Think I will probably spend the summer with the car as is and use it whilst gathering parts, if it should go pop tho' [;)] the rebuild will begin. At the moment I have about 4/5 of my mates cars ongoing being restored so squeezing some time in on my own isn't easy.
Couple of pics of current projects
MK1 Bubble arched project, this is probably getting the first cossie engine, built this from a 13k miler, fitted the steel arches etc
This is a mates MK2 Mexico, been rebuilding the front end and removing a few areas of grot, a very nice original early car
This ones next in the que, its getting painted now then wants a concours rebuild
There a 3 other Escort shells awaiting there turn , hopefully will manage to squeeze the TR in somewhere
