...Can anybody advise from bitter experience which order I should put the interior back in? ... I was thinking of sound-proofing first, then carpets, followed by B-post panels, rear panel and then parcel shelf and finally the dashboard.

That order is pretty much OK
For the interior of my DHC I will keep to the following order;

Soundproofing;

Heater;

Wiring looms;

Carpets;

A post panels;

Dashboard supports and steering column;

Rear of interior;

Front interior trim and dashboard;

Armrest/cubby box and gear lever surround and hand brake lever after the engine is back in the car;

And finally the seats;

Keep an eye on my weblog the coming few months [:p]
