Have you checked the temp sender connection? I can't remember where the sender is on the '7 (the front of mine has been buried in a garage under a pile of junk for two years), I think it's on the radiator though. I Get this often on my Saab, the sender wire falls off and I get zero reading on the temp gauge.
Check the easy stuff before you go ripping the dash apart! [:)]

Very often this is the sender itself. They only cost a couple of quid so it may be worth giving this a try. Other than that the gauge can fail; plus the multiway connector to the instrument pod can give trouble - check the copper contacts for this are nice and clean.

Check the sender by pulling the connection off and earthing it straight to the block. If the gauge goes to full temp the gauge is OK and the sender faulty. If the gauge does not move it is the wiring or gauge itself.

To test the sender - earth the wire at the sender onto the head casting direct. The gauge should move to HOT! If it does - new sender.
